Meet Aja and Tasha, the powerhouse team behind Grilled Cheeze LA. This LGBTQ+, women-owned, Los Angeles-based business brings flavorful and heartfelt grilled cheese experiences to the Westfield Culver City Mall.
Together, Aja and Tasha have crafted an innovative, community-focused brand that reimagines the nostalgic comfort of a grilled cheese sandwich into a gourmet dining experience.
Who We Are
Aja Beard
Aja, a proud Los Angeles native with over 26 years of expertise in the hospitality industry, has successfully managed and opened numerous restaurants in Los Angeles and Las Vegas. Her extensive experience includes Sensi at the Bellagio, Rio All-Suites Hotel and Casino, Boca by The Conga Room, The Lab Gastropub by USC Hospitality, Hotville Chicken, and senior leadership positions with Aramark and Compass.
In 2019, she launched Ask Aja Restaurant Consulting, a bold initiative to help local businesses thrive by applying proven corporate systems. With over 200 clients served, Aja has earned a reputation for her exceptional attention to customer service and accounting precision. Her expertise transforms operations into seamless, memorable dining experiences that drive revenue growth for small business owners.
Tasha Prothro
Tasha hails from both Long Beach and Los Angeles, playfully calling herself a “hybrid” of these iconic cities. With 14 years in the entertainment industry and 10 years as a private chef and caterer, she brings a wealth of expertise to the team. Her culinary journey includes working at renowned LA establishments like The Peninsula Beverly Hills, Bludso’s BBQ, The Arthur J, and serving as a personal chef to A-listers in the entertainment industry. Tasha's creative menus, bold flavors, and deep cultural connections to food are the hallmark of her work.

• Valenzuela’s Pitch: Inspired by Aja’s Mexican heritage, this Birria Grilled Cheese is served with a rich beef consommé for dipping.
• NOLA’s Gumbo Grilled Cheese: A tribute to Tasha’s Creole roots, blending bold, soulful flavors from her family’s French and African culinary traditions.
• Tuna Marie: A timeless tuna melt that never goes out of style.
• Mookie Betta Chedda’: A low and slow cooked brisket grilled cheese.
In true Los Angeles spirit, many of their sandwiches are named after trailblazing icons in sports and entertainment who have shaped the culture of the city they love.
